The rolling-shutter effect described above happens almost exclusively when the in-car footage is shot at slower than 60fps rates.
That might be the problem with the Canon Vixia HF200. The choices are 60 fps interlaced and 30fps progressive. No matter what shutter speed, image stabilization setting, or exposure programming, the Canon HF200 just isn't suitable for motorsports.
I might have to try one of those cheap Aipteks with the external mic input next.

I tried plugging my mic into Troy's Aiptek and all it did was say "No Video." Is there some menu command you have to run to change the A/V input jack into a mic in? Or do the new Aiptek HDs have a seperate mic-in jack?
Anyways, here is a vid using the Vio POV taken yesterday at Devens: http://www.youtube.com/watch?v=z50lf2uUML0 The mic is just laying inside the rear storage bin -- I haven't even clamped it to anything. It does not pick up any cockpit conversations so in that sense all my videos using this system will be family friendly.
Only the newest AIptek camcorders feature a mic input (model Action-HD GVS). Sounds like Troy has an Action-HD camera (not the 'GVS' model), which does not have a specific mic input. The A/V jack on the plain-old Action-HD camcorder (same as the camcorder I have) is specifically for a combination audio/video input at line-levels, and cannot accept a microphone. You cannot plug in just a microphone to this port and have the camera still shoot video. The A/V port completely does away with the camera function and makes the Action-HD act like a VCR.
Be careful what you plug into that port, as Aiptek uses a different pin-out than Sony/Panasonic/etc., so you cannot use any A/V or HD adapters other than the ones supplied with the Aiptek camera.

Will, have you ever mounted your camera back further in the car, like on a harness bar? If so, did the camera have any white balance issues? My GoPro camera will wash out an autox course if I try to mount it far back in the car. Do you know if a wide angle lens can be added to your Alptex? I'm looking into getting a camera like this, but mine will be mounted on a bolt in harness bar or main hoop (upside down) in my car. I'd like to see my hands as well as the course so I was thinking a wide angle lens might help. Any suggestions is much appreciated.
I had good luck with my GoPro at Monticello, mounted underneath my front bumper. Sounds was even good, caught the engine very well with almost no wind noise.
I have the older Aiptek (non HD) and use a bullet camera mounted to the headrest of the passemger seat. The A/V in cable has hook-ups for two mics and the bullet camera. I don't have any issues at all with white out or color shift, maybe because I don't have a top. It seems to show everything I do wrong with clarity
